FRESHLY MILLED BUTTER BISCUIT RECIPE

Ingredients

  • 2 cups freshly milled flour we use hard or soft wheat
  • 2 teaspoons baking pwoder
  • 1/2 teaspoon salt
  • 4 Tablespoons ice cold butter shredded with cheese shredder
  • 3/4 cup. Milk

Instructions

  • Preheat oven to 400Fº
  • Mix freshly milled flour, baking powder and salt.
  • Add cold shredded butter.
  • Using your finger tips massage the butter into the dough. (Tip: the less you mess the better the biscuit. Just try to get the butter well incorporated with out over working the dough.
  • Add milk slowly and mix dough until it reaches the biscuit texture.
  • Roll out biscuits to about an inch 3/4" to 1" in thickness
  • Should be able to get 9 biscuits out of it depending on the size you like your biscuits.
  • Place on baking sheet that has parchment paper on it or is lightly buttered
  • Bake for 12-15 minutes or until golden on the bottom of the biscuit.

Notes

How to create layers in your biscuits?
Layering your biscuits is way easier than most think. 
Here is how to layer your biscuits.
Roll your biscuit dough out to about one inch thick.
Fold in half and repeat.
You will do this about 5-6 times, think layers as you roll each one out.
On the final rollout, leave it at about an inch thick and then start your process of cutting your biscuits out with the biscuit cutter. 
This process always gives us a flaky biscuit and creates fluffy biscuits as well.
