Best Freshly Milled Lemon Blueberry Muffin Recipe

Ingredients

  • 4 cups of Freshly Milled Soft White Wheat flour
  • 2 tablespoons of baking powder
  • 1 tsp of salt
  • 1 cup of honey
  • 1 ½ cups of whole milk
  • 4 eggs
  • 2 tablespoons lemon zest
  • 2 tablespoons lemon juice
  • ½ cup of oil
  • 2 tsp of vanilla extract
  • 1 ½ cups of fresh blueberries

Instructions

  • In a medium-sized bowl, mix your flour, salt, and baking powder. Set aside.
  • Next, in a large bowl, whisk together the milk, honey, eggs, lemon juice, lemon zest, oil, and vanilla extract.
  • Pour the dry ingredients into the wet ingredients and stir until there are little to no flour clumps.
  • Fold in the blueberries.
  • Grease your muffin cups or line your muffin tin with muffin liners.
  • Pour in about ⅓ cup of batter per muffin.
  • Bake at 375°F for 18-25 minutes
  • Once they come out, it's time to enjoy your fresh muffins.
