In a medium-sized bowl, mix your flour, salt, and baking powder. Set aside.
Next, in a large bowl, whisk together the milk, honey, eggs, lemon juice, lemon zest, oil, and vanilla extract.
Pour the dry ingredients into the wet ingredients and stir until there are little to no flour clumps.
Fold in the blueberries.
Grease your muffin cups or line your muffin tin with muffin liners.
Pour in about ⅓ cup of batter per muffin.
Bake at 375°F for 18-25 minutes
